Signs

When we lived in San Diego, Stephen and I were busy with work, riding our bikes, raising two puppies, settling in as newlyweds.
We weren't in a rush to have children, but as a woman, and having the ongoing calendar/timeline always in the forefront of my mind, I wondered when that phase of our lives would begin.
One day I was leaving for work and noticed a mourning dove building a nest on our front porch. After the nest was built, the mama settled down and stayed there until her egg hatched. I remember the sight of this mama sitting in her nest giving me peace about our future, more specifically our future with children. I felt God telling me I would someday 'nest' and take care of my own kin, just as this dove was with hers. I still didn't know when or where, but felt this 'sign' as a promise from God to me.

A few weeks ago, Avery and I watched another mourning dove build a nest. The dove took all day building her nest and then she sat.
She is still sitting. We see her every time we walk out our front door, clear as day in the plum tree. She is on her nest waiting for nature to take its course. Avery says it will take 21 days (as she learned from the Magic School Bus book about chickens). I don't know how long she will be there, but it didn't take me long to realize God was again sending me a sign and a promise that he is taking care of our housing needs. We just have to sit and be patient, whether it is 21 days, more or less.

The full rainbow Stephen and I encountered on our way home from our last house hunt was encouraging too. A sign of hope.

Pizza night!

Avery and I were watching the Food Network and she decided she would really like this for dinner. So we're giving it a go tonight! I am making it a little easier for me, already prepared pizza dough. And mixing up our own ingredients for the inside.
But I think it is going to be a hit. She is such a picky eater, but I can see her willingness to try new things when she watches them being prepared.

Venetian Rolled Pizza

Ingredients
Flour, for dusting
1 pound pizza dough
2 cups (8 ounces) shredded mozzarella cheese
7 ounces prosciutto, thinly sliced
1 cup (about 1 1/2 ounces) torn baby spinach
1 tablespoon olive oil
Kosher salt, for seasoning
Directions
Position an oven rack in the lower 1/3 of the oven and preheat to 425 degrees F.

On a lightly floured work surface, roll out the pizza dough to a 12 to 14-inch diameter circle, about 1/4-inch thick. Sprinkle 1/2 of the mozzarella over the dough. Arrange the prosciutto over the cheese in a single layer. Sprinkle with the spinach. Top with the remaining cheese. Take 1 end of the circle and roll the dough up into a thin cylinder, gently folding in the ends. Brush the dough with the olive oil and season with the salt. Place the dough, seam side down, on a parchment lined baking sheet and bake for 25 minutes until the top is golden brown. Allow the pizza to cool for 10 minutes. Using a serrated knife, cut the pizza into 3/4-inch pieces and serve.
